Perhaps the Cordon Bleu chefs planned the lessons around Shelly’s arrival/birthday because today we made Moka Génoise!
You’ll have to excuse my piping. I burnt my hand today when attempting to check if the burner was still hot. It was accidentally cranked up to 6 (the hottest setting) and left on after my classmate used it. I think the coffee buttercream was melting in the piping bag in my hand as I piped this…oh well, c’est la vie. As long as I can still roll out croissants and pain au chocolat tomorrow!
