Rosemary’s Soup

This soup was inspired by my favorite Portuguese mamãe, Rosemary. I tried her similar soup over winter break and decided to experiment with celery root and other veggies to make my own hodgepodge, mishmash, blended medley. It includes carrots, potatoes, celery root, parsnip, chicken stock, wine, truffle oil, thyme, and of course the buzz word: rosemary! (the ingredient as well as the human inspiration–ha!) Since those ingredients would make a rather lengthy name, I’ll just call it…

I also reckoned it needed some crunch to it so I added some cinnamon raisin toast, which complemented quite nicely. Bom apetite!
