The tomates in Paris are incredibly sweet and delicious. It is so hot [and humid] in Paris lately that my appetite has been muted. However when I do feel a bit hungry, I crave fresh, simply prepared tomatoes. These heirlooms at L’Atelier de Joel Robuchon hit the spot:

Now that my class schedule has been occupying much of my time, however, I usually just  pick up some tomatoes on the walk home and toss them with whatever else looks fresh at the market, whether it’s cucumbers, avocadoes or asparagus and then a bit of salt, pepper, olive oil and lemon juice. The heirlooms were similarly prepared except with the addition of fleur de sel, chives and edible flowers. I don’t have those items on hand, but occasionally I’ll throw in a pinch of thyme if I’m feeling wild. Try it 🙂
