Today in class we made Dacquoise. Here are the treats Chef Tranchant made during demo:

Thankfully I made a rose and not a cabbage, according to Chef. It was nice to practice piping technique and roses [made from marzipan]. The kitchen was very quiet and thus we were able to focus, with the exception of Chef attempting to rush us at the end by flickering the lights on and off. Who said French chefs don’t have a sense of humor?
