Behind the Curtain

We, the crew on the pescado (fish) station, arrive to work before the other crews (meat, pastry, garde manger, etc.).

Here’s a shot of the pescado (fish) station yesterday morning before the rest of the crew arrives. Stainless, spotless and a huge space compared to any kitchen I’ve been in. I’m pretty sure the kitchen is larger than the dining room…
